Ingredients:
2 Tbsp Minced Red Onion
2Tbsp Fresh Parsley (or 1 Tbsp dried)
2 Tbsp Fresh Basil
1 Tbsp White or Red Wine Vinegar
2 Tsp Olive Oil
¼ Tsp Salt
¼ Tsp Pepper
1 Clove Minced Garlic
1 ½ Cups Chopped Tomatoes
1 15 oz Can Black-Eyed Peas rinsed and drained.
Mix the first 8 ingredients together. Add the tomatoes and peas and mix well. Refrigerate for 2-3 hours or overnight.
